Original Blue Burgers with Fig Jam & Arugula
Makes 4 burgers
1 – 1.5 pounds ground beef
½ teaspoon salt
½ teaspoon freshly ground black pepper
4-6 tablespoons fig jam
4 ounces Point Reyes Original Blue
4 burger buns
1 large handful arugula
1 teaspoon olive oil
In a mixing bowl, combine ground beef with salt and pepper. Mix together with clean hands. Form beef into four patties. Prepare gas or charcoal grill. Place patties on heated grill and cook for about 3 minutes. Flip burger and cook for another 3-4 minutes. (Cook longer for a more well done burger.)
Remove burgers to a platter and top with equal portions of Original Blue. Cover platter with aluminum foil and let burgers rest 5 minutes.
Toast buns on grill, split side down, for 1-2 minutes, until brown. In a small bowl, toss arugula in olive oil. Season with salt & pepper. To assemble, spread fig jam on the bottom bun. Top with burger patty, arugula and top bun. Serve immediately.
