
6 tablespoons unsalted butter
3 tablespoons Dijon mustard
3 tsp picked thyme leaves
3 tsp finely chopped parsley
6 oz crustless bread, torn into ½-inch pieces
3 oz Point Reyes Bay Blue, crumbled
Heat the oven to 350F. Put butter in a medium saucepan on medium heat. When the butter starts to foam, whisk in mustard, herbs and a quarter-teaspoon of salt and remove from heat. Allow mixture to cool slightly, then stir in the bread and Bay Blue. Spread out evenly on a parchment-lined sheet pan and bake for 12-15 minutes, until crisp. Remove from the oven and set aside to cool.
Add liberally to your favorite salad, soup or just enjoy as a snack. Warning: these croutons are addictive!
